Food & Recipe: How To Prepare Oha Soup

Oha soup is a delicacy commonly prepared in Nigeria. This may sound a bit strange to some of us but not to a native of Igbo land.

Oha leave is a seasonal leave that grows in any properly cultivated farm land in the South-east part of Nigeria.

The leave is light green in color and very fragile that once cut from stem looses its attraction quickly.

Food & Recipe: How To Prepare Oha Soup

If you have ever wondered how it is prepared, wonder no more. Below are ingredients required and steps to make the Oha delicacy.

 

Ingredient:

  • Oha leave
  • Assorted Beef
  • Dry fish & Stock fish (Isi okporoko)
  • Palm oil
  • White grounded crayfish
  • Shaki (cow tripe)
  • Cocoyam paste or Achi ( for thickening)
  • Onion
  • Ogiri Igbo
  • Seasoning ( Dry pepper 2 cube of maggi & Salt to taste)

Preparation

  1. Wash the Shaki (cow tripe), stock fish and dry fish separately with warm water
  2. Boil the Shaki (cow tripe), stock fish and dry fish in 1 litre of water till they are properly cooked
  3. First sign of a properly cooked Shaki is that the cuts will start curling on itself
  4. Wash the beef and add to the pot of shaki etc. add the 2 cubes of maggi and cook for 5 minutes
  5. Add palm oil, pepper, ogiri Igbo and grounded crayfish and cook for 10 minutes
  6. Add the coco yam paste or grounded Achi in small lumps
  7. Cover the pot and leave to cook on high heat till all the coco yam lumps have dissolved
  8. Add more water to reduce thickening as desired
  9. Wash the Oha leaves, cut to shreds with hands, add to cooking pot and leave to cook for about 5 minutes
  10. Add salt to taste, stir and the soup is ready!

You can serve with Garri (Eba), Semolina, Fufu (cassava), Amala, Pounded Yam.
